I fixed this tonight and it was KILLER... it is in the TNCR Cookbook thread too. I highly recommend. Pork chops with chipotle glaze I saw this on the Today show - looked good! The famed chef gives this tasty dish a south of the border-style kick Jean-Georges Vongerichten 4 portions INGREDIENTS 4 thick cut pork chops Salt/white pepper, as needed Olive oil, as needed Chipotle glaze 1/2 cup sugar moistened with 2 tablespoons of water 2 tablespoons chopped garlic 1 tablespoon ancho chili, toasted and chopped in 1/2 pieces 1 tablespoon chipotle chili, toasted and chopped in 1/2 pieces 1/4 cup plus 2 tablespoons lime juice 1/2 cup lemon juice 1/2 cup orange juice 1 teaspoon salt DIRECTIONS Pork chops Season pork well with salt and rub with olive oil, then grill. Spoon the chili glaze liberally over the pork to coat well and serve. Chipotle glaze Put sugar in a heavy-bottom pot and moisten with enough water to make the texture of wet sand. Cook over high heat until golden and add garlic. Cook, stirring until garlic is toasted and golden, then add chilies. Stir until fragrant, then add juices. Reduce until you have a sweet and sour glaze, then add salt. Reserve at room temp until needed |

Oh man Mik. It's hard for my jealousy to not overshadow my appreciation of that dish. It sounds really tasty. I've just worked a double, My wife should be home any second with a load of groceries to unoad and a hungry baby. I'm not even close to sitting down to dinner, and I really feel like just going to bed right now. Chances are we'll be having something quick...like maybe PB and J's!!! Sorry for the rant, but sometimes parenthood kicks ass. Literally.

so how long did you cook the sugar? a long time..? one can melt sugar with no water and it still takes a long time to turn golden.. did the garlic and chilis cook quickly.. looks like a great recipe.. i'll definitely try it. (i'ma great fan of pork loin) |

Besides - this is a pretty easy recipe. Took maybe half an hour. I probably need to send you some favorite fast recipes. |

The sugar carmelized in about 6 minutes, I only cooked the garlic for a few seconds really, the caramel was so hot I didn't want it to get bitter (and it didn't), and the peppers for maybe a minute or two. Then I reduced it with the juice. I seldom find that TV recipes turn out this good. I guess it helped that I had excellent pork chops. |
