Scientists really don't know...

Some of the current theories:

They may do it to escape a potential predator
Part of a courtship display
To rid themselves of skin parasites
Possibly a kind of play...

HOLY CARP!!!
When we were at Discovery Cove, we got to swim with rays and skates. It was SO cool. The skates came right up out of the water many times - and it honestly did seem like they were "playing" with the people in the water when they did so. It was awesome!

Spread a little curry paste and grill 'em, yum!

Those in NYC/Manhattan can go to this restaurant called Nyonya and try out #16 or #17 under "Seafood" http://www.penangusa.com/location_nyonyagr_menu_in.html :P
