HOLY CARP!!!
I want to make fried eggplant.

Do people boil or microwave it first, or just and put it into the frying pan raw?
Cut slices about 1/4".
Very hot olive oil in a cast iron skillet.

Salt, pepper, garlic.
I don't really want to dip in in batter or breading.
Will this work?
Is this how it is usually made?

Any advice?

HOLY CARP!!!
Stab in a few times with a fork and put in the oven (or microwave) to dry it out a bit. Then it doesn't soak up quite so much oil when you fry it.

Can you make Lasagna? If so, slice it 1/2 inch thick,
fry it lightly in Olive oil, layer it in a baking pan with Riccota cheese mixture, meat sauce (red) and repeat. Bake it at 350 covered for about an hour. Sprinkle grated
Parma cheese on top before serving. Call me, I'll bring the wine.

Or simply dip it in a mixture of egg and milk and fry in oil. But, don't call me.

or salt and let it drain - takes a while... if i do it i slice it lengthwise into 1/2 inch slices - and spread it upon a baking sheet.. i just don't use alot of oil tho.. that technique is good for lasagna or moussaka because eggplant holds alot of moisture

i just cut it up into strips (with the peel) and sautee it with onion, garlic and tomato in olive oil.. some mediterranean spices
it behooves me to behold

My girlfriend loves eggplant. She doesn't do anything to it first, she just drops it right in the frying pan.

Or bakes it for eggplant chips.
