I'll be making some "grill fries" tomorrow as a side dish. Prep involves lengthwise cuts at
1/2 X 1/2 thick. They'll get sprayed with a bit of oil and go over direct charcoal heat, then seasoned.

Would it be a mistake to wash and cut them this evening? I'm wondering if they'll dry out or something.

If you want trouble, find yourself a redhead
Just put them in a plastic bag wrapped with very wet paper towels. You could even soak them overnight, But I wouldn't.
