One of my faves: Picnic Pasta Salad 1/2 pound macaroni or other small pasta 3 carrots, shredded 2 cups chopped fresh broccoli 1/2 fennel bulb or 2 celery stalks, chopped (I've always gone with celery) 1 red bell pepper, seeded and finely chopped 1/2 cup finely chopped red onion 1/4 cup minced flat-leaf parsley 1/3 cup reduced-fat mayo (I've used the full fat before) 1/4 cup nonfat plain yogurt 1/4 cup light sour cream 4 teaspoons fresh lemon juice 1/2 teaspoon salt 1/2 teaspoon freshly ground pepper 1/2 pint grape or cherry tomatoes, halved 1. Cook pasta according to package. Drain. Rinse under cold running water for 1 minute. Drain again. Place pasta in large bowl. 2. Add the carrots, broccoli, fennel/celery, bell pepper, red onion, and parsley. 3. Combine mayo, yogurt, sour cream, lemon juice, salt, and ground pepper in medium bowl. Stir into the pasta and vege mix. Stir in the tomatoes and serve at once, or cover and refrigerate up to 2 days. per serving (generous 1 cup): 191 calories, 5g total fat, 1g saturated fat, 6mg cholestorol, 262 mg sodium, 32g carbs, 4g dietary fibre, 6g protein, 64mg calcium I love this salad. In fact, I think I'll make some tomorrow!

I don't have an actual recipe, but I make a Greek pasta salad sometimes, with penne, rotini or whatever. Good olive oil, lemon, lots of garlic, kalamata olives, feta cheese, tomatoes, cucumber, parsley, oregano, s&p to taste. |
