mmmm....pumpernickel! Here's a suggestion: Pumpernickel with cream cheese. Now, slice a radish (!) and put it on the cream cheese with a bit of salt! AH! Lithuanian Heaven! |

Mmmm, I love pumpernickel too, but haven't had it in a zillion years. I'm super allergic to rye. I used to like it with a bit of horseradish mustard spread on top. |

My favorite way to eat it.... First toast lightly, then spread with hummus, a sprinkle of chopped onion and cover with shredded Jack or Cheddar cheese. Put back under the broiler till cheese is melted..... heaven.... |

Pumpernickel gets its color from molasses and so this bread probably has more potassium than most others, just a little anyway. Like many others, I like mine toasted. Of course my favorite rye is seedless Jewish or Swedish rye (have never really liked excessive caraway), but pumpernickel is right up there. It makes great sandwiches, especially those with a faintly Scandinavian or Eastern European ethnicity. I used to eat it with another favorite - a Polish or Russian breakfast consisting of fried kippers (herring) and sweet onions. Later in the day, maybe open face with fresh almond butter. Let me tell you all that as much as I like fresh peanut butter, I LOVE almond butter and wish it were more widely available. But someone mentioned radishes and this is why I'm posting. To me, radishes are among the most underrated vegetables I can think of. They have a lot going for them and there's hardly anything better than nice crisp cold radishes on a hot day, chased with beer of course. I learned to eat them this way on my last trip to France where they grow many interesting varieties including radishes that are shaped more like carrots, cright red on top and white as the tap root runs to a tip. |
