i would still cut them larger.. in strips.

First in a large saute pan, i would layer olive oil, onions, eggplant (which appears to be missing in that picture, unless it's been peeled, which is a mistake because the skin can be so succulunt) and zuccini (or whatever the princess calls them). I would heat the pan till the onions started to practically burn then throw in tomato wedges, (or canned tomatoes) garbanzo beans, garlic. After a quick stir i would cover and slowly simmer the mixture, throwing in a couple handfuls of basil and oregano before serving.

excellent cold for lunch in the summer.

i would leave out all the yucky ones, like squash and corgette (can't be bothered to attempt a spelling of zuchineinifdvnxhgmm...) and mushrooms.
And how are you today?
