I only got Portrait of Ruin and Super Castlevania IV. I've played a little bit of Harmony of Dissonance, except on an emulator. So brings my question, which ones should I definitely get?

*Winks at Ecto*

All of them.

Castlevania (NES)
Castlevania II: Simon's Quest (NES)
Castlevania III: Dracula's Curse (NES)
Super Castlevania IV (SNES)
Castlevania: Bloodlines (GEN)
Castlevania Adventure (GB)
Castlevania 2 - Belmont's Revenge (GB)
Castlevania Legends (GB)*1
Akumajou Dracula X: Rondo of Blood (PCE)*2
Castlevania: Dracula X (SNES)*3
Castlevania: Symphony of the Night (PS1) HERE, HERE, HERE BE ZE AWESOME!*4
Castlevania: Chronicles
Castlevania 64 (N64)*5
Castlevania: Legacy of Darkness (N64)*5
Castlevania: Circle of the Moon (GBA)
Castlevania: Harmony of Dissonance (GBA)
Castlevania: Aria of Sorrow (GBA)
Castlevania: Dawn of Sorrow (DS)
Castlevania: Portrait of Ruin (DS)
Castlevania: Lament of Innocence (PS2)*6
Castlevania: Curse of Darkness (PS2 / XBox)*6
Castlevania: Dracula X Chronicles (PSP)*7

*1 - This one really sucks and was only listed for completeness sake.
*2 - That says it's for the PC Engine and was never released in the states. It will be included in Dracula X Chronicles, and is one of the elite three of great titles.
*3 - Not the same as the PCE Dracula X, as many stage arrangements were changed. While not nearly as good as the PCE version, it's good enough in it's own right.
*4 - Widely regarded to be the greatest game in the series, which is my opinion, too.
*5 - The N64 ones have debatable quality, but they are mostly mediocre. Included for completeness sake.
*6 - The "PS2" Castlevania's, while still having the care of artistry of some of the greater titles, are rough around the edges and aren't for everybody.
*7 - Not yet released. Includes both Symphony of the Night, the PCE Rondo of Blood, and a 2.5D remake of Rondo.

Those are your options. Personally, aside from Legends, you can't really go wrong.

I'm going to pick up the handheld ones and the PS1 game first. I'll move onto the others later and for the early ones, I'm just going to download for an emulator
