<p><i>"The secret ingredient for the entrée round is trout. Trout are a fresh water fish found naturally throughout North America, northern Asia and Europe. Trout are somewhat bony, but the flesh is generally considered to be tasty. The flavor of the flesh is heavily influenced by the diet of the fish. "</i></p>

<p>It took a few moments for that to sink in. Trout! She tended to forget which fish was which in English, but once she saw it, she knew. <i>Masu,</i> and some very nice ones at that! For once, Mikayo felt completely at home with the required ingredient. However, exactly what she'd <i>do</i> with it was a little different...</p>

<p>Usually, she just made <i>shioyaki</i>, fish fried with salt and other seasonings. It was a quick and filling meal, but one that usually made foreigners grimace, for the fish was fried whole. Also, it was pretty simple, so... Maybe she should try sometime more complicated (and that would appeal to the pallete of the non-Japanese population of the island, which was...most people).</p>

<p><i>Onigiri</i> (rice balls)! With a trout filling! That would be perfect. ...A little odd, perhaps, but it sounded good to Mikayo. So she set about preparing the rice (and made sure it was the short-grained, sticky kind), sliced the meat off the trout and made it into a thick stew flavoured with <i>dashi</i>, soy sauce and a little bit of <i>mirin</i>. Once the rice was cooked, she shaped it into small patties and then put a couple of small pieces of fish on it, then rolled it up and shaped it into the stereotypical triangle shape. She debated whether to put seaweed on it as a finishing touch, and finally decided to go ahead, wrapping each with a sheet of <i>nori</i> seaweed.</p>
<p>There! She surveyed her work, piling up the <i>onigiri</i> in a circular pattern on her platter. It looked good; she hoped they tasted as good as they looked!</p>

Trout... trout. Now that was a tough one! But August Lupei loved the thrill of a challenge. They could do any sort of things with trout, though, she was a fan of smoked trout herself. Herbs and citrus fruit went well with trout... Of course! August turn to her husband, and nodded. She knew just what to make.
<p>
"Alright hubby! Here's your next mission! Go bring me salt, pepper, butter, yellow onion, thyme, rosemary, parsley, lemon, lime, extra-virgin olive oil and dry white wine." She spoke quickly and Wolfgang nodded at the end to show he got everything and ran off to the battlefield the pantry to get the ingredients. That left her free to get the trout and preheat the oven. When Wolfgang came back with the ingredients she sent him back to get some parchment paper.
<p>
August washed the trout, and dried it off with care before setting it down on the cutting board to score the side, cutting down until she felt the bone. Wolfgang neatly and slowly sliced the yellow onions, lemon, lime, and came close to cutting himself one or two times. August first spread a tablespoon of of the white whine and olive oil over the fish before she generously seasoned the trout on all sides with the salt and pepper. While doing that she gave instructions for the next step to Wolfgang. He laid the onions on the parchment paper and she laid the trout ontop of that and began to stuff the herbs inside the trout, some pieces sticking out just a little. The butter, and lemon slices rested on top of that. When the trout goes into the oven the butter will melt and mix with the lemon and that flavor will mix with the herbs and give her trout its delicate flavor.
<p>
"It's looking good, wifey." Wolfgang grinned, remembering this particular recipe . "I got this part. Just fold the parchment over and under, right? Right." Wolfgang wrapped the trout up and set it on a baking sheet and put in the over. August set the timer and they discussed a side dish to go with the trout. They decided upon a crisp side salad of lettuce and spinach with red vinaigrette.
<p>
When the trout finished cooking Wolfgang took it out from the oven and set it on a dark blue platter, carefully removing the parchment all while keeping the arrangement of fish, onion and lemon, and August added some limes cut into triangles along the sides to add a little more color to the white fish with little pockets of green from the herbs. It smelled heavenly. To the side of the platter they set the salad bowl with the vinaigrette drizzled over it.

<br><br>’Trout? What can we do with trout?’ Lizzy thought as she pondered over the next ingredient. They really were trying to throw them for loop here. It wasn’t that she lacked experience with fish, to the contrary she had cooked fish on several of occasions but she didn’t think she had ever used something like trout before. That being said she had never thought that this would be a cake walk. The judges were here to see who knew the most about cooking and the only way they could do that was by testing the competitors.
<br><br>
They could fry it but that seemed far too common. They could marinate it, sear it and serve it dressed up for the judges but that also seemed too common and would probably take too much time. The judges would be looking for something more and Lizzy felt that she and Wes could and should give it to them. The problem was that her mind had just gone blank at the moment. Turning to Wes with a helpless expression on her face she whispered. “Any ideas?”
<br><br>
She didn’t even have to ask. Wes was all over the idea as she knew he would be. It looked like they would be putting a Japanese spin on the dish and showing that they weren’t limited by one style of cooking. Lizzy wasn’t exactly sure what Wes had in mind but she had faith he was thinking of something amazing. “Boil some rice and seaweed, got it.” Rice and seaweed could only mean one thing. Her little sushi chef was going to go back to his natural calling.
<br><br>
Wes wasn’t the only one who could think on the fly though and an idea had already begun forming in Lizzy’s head. She had learned from Wes that rice could be used in many ways and now that knowledge was starting to come back to her. “I think I’ve got an idea for something we can add on the side. I’ll be right back with everything.” She said and then sped off into the pantry in search of the ingredients that she would need.
<br><br>
Wes had told her one time that every good Japanese meal needed rice and she had been around him long enough to know that those words could mean a great many things. If they were going to use a Japanese theme then Lizzy decided she could use some of those tricks she had learned to really give their meal some extra flair. Rice cakes with a teriyaki dipping sauce would help provide something to really separate them from this other teams.
<br><br>
Let’s see Wes was getting the vegetables so she would some garlic, eggs, bread crumbs, rice…oh and some olive oil too in addition to the seaweed she needed for the sushi. She was sure she could borrow the left over vegetables from Wes’ sushi to make a vegetable mixture of her own and while he was working with the fish she could be frying up the rice cakes for a savory little treat that would be the perfect fit for their sushi meal.
<br><br>
Bringing the ingredients back to the cooking area she immediately saw that Wes was already working on the fish for the first part of their dish. She needed to get to work as well so Lizzy did that very thing by grabbing a large pot and setting Wes’ rice and seaweed to boiling. Next she started working on the vegetables as she had been told making sure to cut up some extra carrots and celery for her on creation. With that completed Lizzy launched into creative mode again and scooped the extra vegetables into a skillet. They would need to get soft to really work in the rice cakes so she turned the stove heat to medium and stirred them for a few moments until she was satisfied.
<br><br>
Once her vegetables were ready she transferred the mixture to a large bowl and stirred in the garlic, eggs, bread crumbs and the extra rice she had brought from the pantry. Her plan was to use the eggs and bread crumbs to hold everything together and as she began pressing out the small, palm sized patties it seemed to be working well. Placing each of the cakes back into the skillet to cook Lizzy added a small amount of oil and set them to frying on the stove.
<br><br>
They looked like they were coming along nicely and as the fried rice cakes finished Lizzy immediately got them ready for plating by scooping them out of the skillet with a spatula and slipping them onto plates. Wes has already taken the liberty to grab some teriyaki sauce so Lizzy went ahead and added a little on the side for dipping. Now all they needed was the main course and with any luck Wes should be getting that finished soon.
<br><br>
Draining off the boiling water from the rice and seaweed Lizzy laid out everything for Wes to use and brought over the plates with her rice cakes. “Pretty good for making up a recipe on the fly huh? I guess I really did learn something from helping you with all those Japanese dinners we’ve had together.” She smiled at him and waited to see if he needed any more help.

Trout? Well, the you might as well just let everyone else sit out this round because Jo... this kind of stuff was her specialty! She had a home field now! You catch it, and she could easily make your taste buds melt is twenty different ways!<p>

Jo grew up eating practically nothing but fish, crawfish, crab, and oysters! After all, her dad was a fisherman... In fact, it's because of her dad that she even knew how to cook! He would come back from a fishing trip with tons of trout, catfish, red snappers... You name it, he probably caught it! Then, for dinner that night, they would feast on fish!<p>

Her mother was the best cook anyone could ever meet. Some people say she could even cook better than Emeril Lagassee, and that was really saying something. Jo learned everything she knows about cooking from her mother.<p>

So.... What would she do with the trout? Thousands of different options came to Jo's mind. She could blacken it, deep fry it, bake it, barbecue it, grill it, steam it, roast it, pan fry it... THAT'S IT!!! She knew what she was going to make! <p>

Jo quickly rushed back to the pantry to get the necessary ingredients then rushed back. She took out a cutting board and a knife and starting filleting the fish, then once that was done, she pulled out a cast iron pan and, turning up the heat, melted some butter along the bottom of the pan.<p>

Then, she coated the bottom of the pan with a layer of all sorts of spices. Cayenne, garlic, paprika, garlic powder, black pepper, white pepper, basil, chili powder, thyme, and ground cloves laced the bottom of the pan. Then, she proceeded to pull out a decent sized pot, layered the bottom with potatoes, and filled the pot with cold water so that the water stopped only an inch above the potatoes.<p>

She set the pot on top of the stove and turned the heat up, letting the potatoes boil. As they were boiling, she turned up the heat in the pan with the spices, and placed the fillets in the pan. She squeezed the juice of a lemon over the fish, and let them cook for five minutes. Then, noting that the potatoes were done, she turned the heat off on that pot, and let it sit as she flipped the fish over to cook on the other side.<p>

She grabbed two pot holders and a strainer, placed the strainer in the sink, and poured the contents of the pot into the strainer. By the time she finished this, the fish were done. She turned the heat off, placed the fish on a dish, and poured the juices from the pan on top. Then, over to the potatoes. She took three, and cut them in wedges, buttered them, and strategically placed them about the plate to make it look more appealing to the eye. Now, that was one delicious looking meal!<p>

Two rounds down and one to go. Get your sweet tooth ready because it's time for the dessert round. Remember that our winners will be announced after all rounds have been completed. Now competitors please prepare for the next round. The secret ingredient for the dessert round are flour tortillas.
<br><br>
Tortilla means "little torta" or "little cake" in Spanish and is a word that applies to several different foods eaten in various Spanish-speaking countries. The tortilla is no longer seen as just ethnic bread. Many use wheat flour tortillas in various dishes. Some alternative ways tortillas can be eaten include combinations such as beans and meat, apple cinnamon and sugar, or peanut butter and jelly. Flour tortillas are also used to make sandwiches, casseroles and stews, and hot dogs, and there are numerous other uses. Many people from northern Mexico and the native Mexicans in the southwestern United States eat tortillas as a staple food. Many restaurants use wheat flour tortillas in a variety of non-Mexican and Mexican recipes. Many grocery stores sell ready-made tortillas.

Wes couldn't ask for a better partner in all of this. He could only grin as the smell of the rice cakes wafted through the air, and once Lizzy was done frying those, he pulled out another pan to slap the fish pieces on. That was the flexible thing about sushi, you could eat it cold or cooked. And to avoid getting the judges sick, he went with cooked this go around.
<p>
"I'd say you have. Good to see I've been rubbing off on you in a way other than language" he winked at her, flipping over the fish and letting that side cook for a bit. Once they were looking cooked enough, he flipped the stove off and transferred the fish onto a plate on the counter. Taking the pot of rice and seaweed off, he began the process of actually making the sushi itself.
<p>
He scooped out some rice and molded it into a tight little square. On top of that, he laid a piece of the trout and then wrapped it up with some seaweed. He made at least five or six bits of sushi, and was utterly pleased with his work. Then he brought all of their food together on one bigger plate. Sushi next to the rice cakes and vegetables with small bowls for the teriyaki and soy sauce. Done!

Now onto the dessert round! And this utterly confused Wes. Tortillas. They were like flat, floppy discs. He...didn't know what to do now. Had no idea how to work with them. What were these?! <br><br>Tortillas…what a strange ingredient for a dessert. Still, Lizzy supposed there could be worse. That being said they were still going to have to come up with some way to use a rather ordinary base ingredient to make something to please the judges’ sweet tooth. Looking to Wes she gave a reassuring smile and replied, “Let me think for a minute. Working with tortillas isn’t that bad but finding something that will impress and wow the judges might be a little tougher.”
<br><br>
The truth was Lizzy had used tortillas before. They worked especially well in Mexican dishes and she had even used them to fry her own tortilla chips before but that still wasn’t much of a dessert…unless. “Do you think you could cut the tortillas into wedges and fry them up as chips? It’s not much but I think I know of a way to make us something sweet out of them. If we could mix up some sugar and cinnamon and sprinkle that over them as soon as we get them out of the skillet then we’ll have something that would be like a crunchy cinnamon chip. We’ll need something else but that’s a good start. You’ll need sugar, cinnamon and some vegetable oil to fry them in so if you can get that I’ll try and come up with something to really set our dessert off.”
<br><br>
Yes, that would be something, a good start at least and it would take care of the secret ingredient. The problem was that it just wouldn’t be enough. It would have to be something that went with the sugary, sweet taste and something that went well with crunchy tortilla chips. Maybe something to dip the chip in…but what could she use that would be impressive to the judges?
<br><br>
All these questions and more were racing through Lizzy’s mind. She was really struggling with the idea and for a moment she was about ready to throw in the towel and just toss something simple together but then an idea came to her. Suddenly she knew exactly what she needed to do. She could use ice cream but not just any ice cream…fried ice cream to match the taste of the fried chips.
<br><br>
Without sparing a moment for thought Lizzy rushed off to the pantry and grabbed the items she needed. Corn flakes to provide the coating of the ice cream balls so they wouldn’t just melt in the oil, some whipped cream and honey to go on the side and good old fashioned French vanilla which would be the most important part. Everything else she would need, the cinnamon and the oil for frying the ice cream, she could grab from Wes when he came back.
<br><br>
As she returned to their area with her ingredients in hand Lizzy cleared a spot to work and then set to the task of crushing up the corn flakes in a shallow dish. The ice cream would have to be coated in a flaky shell if this was going to work. Otherwise it would just end up with a melted puddle of French Vanilla flavored oil which would not be very appetizing and certainly wouldn’t be winning them any competitions.
<br><br>
Once she was finish crushing the flakes into crunchy mixture the blonde added in a little of Wes’ cinnamon and stirred everything together. This was where the flavors would really blend. The cinnamon and the sweet fried taste would give the dish a unified flavor so as not to have one part overpowering the other. Next came the ice cream and as Lizzy scooped out each of the balls she made sure to roll them thoroughly in her mixture of corn flakes and cinnamon until they were completely covered.
<br><br>
Now came the moment of truth. If she messed up here, if the ice cream didn’t stay together like she planned, then she and Wes were sunk. Grabbing another skillet, so as not to interfere with Wes’ preparations, Lizzy poured in some oil and carefully dropped each of her creations in and listened as the oil began to crack and pop. With that step complete the only thing that was left to do was to step back, watch and hope that her idea worked.
<br><br>
The entire process wouldn’t take that long, only thirty seconds at most, but as Lizzy stood there with her fingers crossed it seemed like the longest thirty seconds of her life. The blonde watched carefully as the oil did its work and as soon as they began to turn golden brown she scooped them out and placed them on plates for the judges. She watched for a moment as her creations cooled and when she saw that they weren’t going to melt before her eyes she finally was able to release a long sigh of relief. Her plan had worked.
<br><br>
Lizzy grabbed some small bowls and filled one with honey, the other with a dab of whipped cream and stepped back to admire their work. All they would need now was the cinnamon chips which Wes was finishing up and their part in this little competition would be completed. She walked over as Wes finished up and gave him a quick hug. “Well we did our best. Here’s hoping that our best was good enough. Keep your fingers crossed.”

Tortillas??? Well, that was ah... different. But it would all be okay! Jo was master of creativity and, heck! desserts were her strong point! She could make them look pretty, and taste good!<p>

So... What was she going to do with tortillas? She could bake them... Maybe make them into some sort of a shell... Aaand... Fill the shell with something like ice cream... or cream cheese... Yeah! With a chocolate drizzle!!! Yum!!!<p>

Jo immediately rushed to the pantry, listing the things she would need in her head, and hastily grabbed each one, carrying them back to her station. If she was going to do this, she would need as much time as possible. First things first, she preheated the oven. Then, she opened the sugar and cinnamon, and coated the tortillas with a combination of the two, cut the tortillas into fours, and placed them in a muffin tray. It wasn't too long after she finished placing the tortilla quarters into the muffin tin that the oven was ready, so she slid the tray in, and moved onto her next task.<p>

Then, in a bowl, she beat a cup or so of cream cheese until creamy. Once that was done, she added in some vanilla pudding and vanilla ice cream, and mixed it until it was thick. Then, she took the mixture and put it in the refrigerator to cool while she waited for the tortillas to finish baking. Wouldn't be too long now.<p>

While she was waiting, she took some milk and white chocolate morsels and put each set in a bag and microwaved the chocolate until it was all melted. Ding! The tortillas were ready! Jo grabbed an oven mit and removed the tray of tortillas from the oven. Those would cool for a few minutes.<p>

Jo took the mixture out of the fridge, now slightly more solid than before, and scooped a few teaspoons of the mixture into each cup. Then, she took a fork, and made a swirly pattern in the cream, then drizzled each cup with the chocolate, half receiving milk chocolate, and the other half white. Then, once satisfied that her desert looked pretty enough, she took the tortillas, strategically placed them on a plate, and put them in the refrigerator to await the moment that they would be transported to the judges.<p>

"Last round, wifey." Wolfgang grinned and rubbed his wife's shoulders."We'll knock them out of the cooking park!"

"Oh, Wolf!" August laughed then quieted down as the next ingredient was announced. Flour tortillas? That was unexpected, but why should this competition be easy? It shouldn't! But August was scrambling to think of a recipe. She'd have to think way back, Italian and German were her two cooking focuses for the last five years. Before that she danced around various styles, starting with French then worked her way around the world.
<p>
Flautas. August blinked, the word had suddenly came to mind. Flautas were rolled tortillas. So for a dessert.... something fried, and with cream! Oh, August didn't know any recipes like that but she knew a crepe recipe she could borrow from. Then she could make some sugared nuts to add. And chocolate sauce! Oh what a wonderful, creamy treat this will be!
<p>
"Hubby, I need the flour tortillas, mascarpone cheese, heavy cream, vanilla extract and unsalted butter!" August gave her orders and set out to the pantry with her own list in mind. She'll pick up the pecans, sugar, butter, chocolate and toothpicks. The trip to the pantry was quick. And their arms laden with ingredients the two made their way back and set everything down on the counter. August glanced over everything with a critical eye and Wolfgang stood to the side, patiently waiting for his orders. After a moment August confidently gave him his instructions.
<p>
Wolf nodded and grabbed the cheese, cream, vanilla and sugar. Carefully measuring each he put the ingredients in a bowl and mixed them together until they were a smooth mixture, the smell of the vanilla lingered above the bowel and made his stomach growl. "When do we get to eat?" He joked and got back to work, spreading the cream over the tortillas. Meanwhile August got out a small frying pan and heated up some butter and sugar. When the butter frothed and the sugar melted she added the pecans to the mix, stirring them around until they were coated in the sugar. She took the sugared nuts out of the pan and laid them on some wax paper to cool.
<p>
While the nuts cooled, August got to work on the chocolate sauce. When that was started she took the now cool pecans and spread them over top the cream on the tortillas and together they rolled the tortillas to make the flautas.
<p>
August grabbed a large frying pan and melted the un-salted butter inside and began to fry the flautas. A minuet each for both sides, the tortillas turning golden-brown as they cooked, the smell of vanilla and warm pecan began to make her hungry too. Finally when all the flautas were cooked Wolfgang laid them out on a plate and she grabbed the chocolate and drizzled zig-zags over them all.
<p>
"Whew! We did it, hubby!" August said and smiled. Win or lose this was a lot of fun!

<p><i>The secret ingredient for the dessert round are flour tortillas. Tortilla means "little torta" or "little cake" in Spanish and is a word that applies to several different foods eaten in various Spanish-speaking countries.</i></p>

<p>Mikayo didn't hear much of the information about tortillas, actually. She was too busy wondering what, exactly, those flat round white things were.</p>

<p>She tore off a small piece of one just to try it. Was it sweet? No, not sweet. It tasted kind of like bread. What on earth was she supposed to do with something that tasted like <i>bread?!</i> How did that make a dessert??</p>

<p>Pancake? ...No, too thin. Crepe? Not eggy enough, but maybe she could try something like that. She'd rarely eaten crepes, but they were just like really, really thin pancakes, right? Wrapped around fruit? Or chocolate or cream cheese?</p>

<p>She's already used fruit in her appetizer, so she figured she should make this one differently. She whipped up a rich chocolate fudge batter and used it to fill the tortilla, but since it wouldn't stay shut, decided to try frying it. A hot, chocolatey dessert would be just perfect! ...It wasn't really a crepe anymore, but... She then drizzled caramel and chocolate syrup over it to give it a sweet finishing touch.</p>

<p><b>Mikayo's entry: A...fried chocolate burrito/chimichanga thing drizzled with chocolate and caramel syrups. Of course, she doesn't know that's what it is, but...that's exactly what she made, lol.</b></p>

Well that was certainly an amazing display of culinary skills. All of the meals prepared where excellent and the absolute highest quality. There can be only one winner however. Now that all submissions are in we have tallied the scores and have come up with the master cook from this year's cook off.
