A Russian Lent cake is one made without dairy, ie vegan. As long as one isn't eating meat or dairy, one is still keeping the Lenten fast according to Russian Orthodox tradition :)

It is possible to make a cake without eggs, as I have learned from my WWII cook book! You can make this one in the tin you cook it in! 1 1/2 cups flour 1 cup sugar 3 Tablespoons cocoa 1 teaspoon baking soda 1/2 teaspoon salt 6 Tablespoons oil (assume an oil with no flavor) 1 Tablespoon vinegar (assume a mild vinegar like white vinegar) 1 teaspoon vanilla essence 1 cup cold water Preheat oven to 350 Fahrenheit. Put dry ingredients in sifter. Sift into ungreased cake tin (8" x 8"). Make 3 holes in dry mixture. Pour oil into first hole, vinegar into second, and vanilla into third. Pour water over all. Stir with fork until evenly blended. Bake 35 - 40 minutes at 350 degrees. ![]() |

Here is a nice one. Sort of like a pineapple upside down cake. I made it for the parish staff meeting and the nun incharge of CCD asked if I could make three of them. I thought she was going to give it to the classes---wrong! she brought it home to the convent Caramel Apple Upside-Down cake Topping 4 TBS unsalted butter 1/2 cup heavy/ whipping cream (Double cream ?) 1 1/4 cup brown sugar 1/4 tsp salt 2 tsp vanilla 3 large firm cooking apples (about a LB) cored peeled and sliced. Batter 3/4 cup unsalted butter 1 cup sugar 1 1/2 tsp baking powder 1 tsp vanilla 1/2 tsp salt 1 tsp cinnamon 1/8 tsp nutmeg 3 large eggs 1 3/4 cups all purpose flower place the topping ingredients, except for the sliced apples, into a deep 9 to 10 inch wide oven safe sauce pan or stove top safe baking dish. Stir over medium heat until the sugar is dissolved. remove from the heat while you add the apples, layering them in concentric circles to cover the bottom of the pan bring to a boil over medium/ high heat, and continue cooking for 16 to 18 minuites, until the apples are tender and the liquid has turned a light caramel color (colour) and thickened slightly - it should coat the back of a spoon in a thick layer. while the apples are cooking, prepare the batter. beat the butter, sugar, baking powder, vanilla, salt and spices together until fluffy. Add eggs one at a time scraping the bottom and sides of the bowl after each addition. Whisk in the flour. scoop and drops mounds of the batter over the apple mixture. Smooth slightly-- there may be spaces but they will disappear as the batter cooks. Bake in a preheated 350 oven ( sorry I don't know gas 4,5,6, whatever) for 40 to 45 mins. until caramel bubbles up from edges and cake slightly browned. Test as you usually do mking sure that you don't get into the caramel. Let sit for at least 10 min. run knife around edges and turn out on serving platter. serve with ice cream or whipped cream. better when slightly warm. supposedly it can be re-heated at 350, but it has never lasted that long. |

Earlier this year, as I drove back from Praha, I went through a town (and yes, it was a town, not a village) in Thuringia, which was in eastern Germany, where the whole town was Christmas every single day of the whole year. It was quite fun for the few minutes it took me to drive through, but the mere thought of being surrounded by Christmas every day for the rest of my life is like being forced to eat a box of chocolates every day - enough to make me feel sick of ever knowing another Christmas! For me, Christmas is still full of the joys of childhood... just so long as I can see a way out in the not too distant!
